I just recently discovered a new way of brewing tea. Well, its new to me but a very old practice in the East. Its called Gung Fu.
Basically gung fu brewing is where you use far more tea leaves per volume of water. Generally you brew a very small ammount of tea in one go and the brewing time is much shorter. So where you might brew an oolong in a teapot for 5 minutes using 3 grams of tea and 600ml water, with gung fu you might use 3 grams of tea and 100ml water, brewed for 30 seconds.
You get a much richer flavour brewing this way. I highly reccomend it. And an essential tool for brewing this way is a tiny teapot or a gaiwan like this.
This particular one was glazed with a celadon glaze that I make from a local granite. It comes out a really nice light blue on porcelain. These items take a long time to make as there are three parts that all require trimming. Also due to he thinness of them I lost many of them in the kiln… wood firing can be pretty harsh. I went into the firing with 16 of them and only got 6 good ones out. That’s not the kind of percentage I am looking for! So this is a rare bird. Hence the price.
